Paleo Burger

So, we’ve decided to eat healthier since well, Kate and I have been slacking lately. Paleo-ish burger!? Sure why not? Kate called me on her way home from work and asked me to make my guacamole and start the grill and she would take care of the rest. Now, this meal would go great with a Napa 2007 Cabernet Sauvignon, but since we still had a few beers left over from my birthday party, we decided to guzzle down the Coronas we had. Kate made zucchini chips with panco which were off the chain! So, it was a tomato, zucchini chip, meat patty, and guacamole with the Aji Chombo hot sauce.

Here’s my recipe for the guacamole (if anyone is interested):

  •  4 ripe avocados
  • 3 tomatoes
  • 1 lime, zested
  • 2 limes, juiced
  • 1/2 bunch of cilantro, washed and dried
  • 1 red onion, finely chopped
  • 2 green onions, diced
  • 1 serrano chiles, finely diced
  • 1 clove of garlic
  • Salt
