My home

I’m a new resident to Wilmington, DE and for the first time in a very long time, I feel as though I’m home. Although, a piece of my heart is in another state, I’m very happy with where I am and with whom I’m with. Kate has made my transition to living in DE effortless and quiet enjoyable. We’ve had a few great memories so far and with many more to come, I’m very excited for the journey ahead of us as we grow together and further explore what this wonderful little city has to offer us. From our own zoo (and no I’m not talking about our house), to being able to walk to the bars, Wilmington, DE is our new home.

In an effort to document us living here, I’ve been taking some little snap shots when I remember to take my camera with us. Here is just a little snippet of Wilmington. I’ll be updating this through our journey together… Enjoy.


Boxing at the Bob

For the first time ever, boxing will be held at the Bob Carpenter Center in Newark, DE. “The New” Ray Robinson’s scores a knock down against Professional Ghana boxer, Raymond “Emperor” Narh. Robinson won the bout and is now the new USBA Welterweight Champion and now has a Top 10 world ranking in the IBF.

Spivey lost his belt against Narh’s fellow Ghana countryman, Samuel Kotey Neequaye. Spivey was ranked #9 in the world.


Paleo Burger

So, we’ve decided to eat healthier since well, Kate and I have been slacking lately. Paleo-ish burger!? Sure why not? Kate called me on her way home from work and asked me to make my guacamole and start the grill and she would take care of the rest. Now, this meal would go great with a Napa 2007 Cabernet Sauvignon, but since we still had a few beers left over from my birthday party, we decided to guzzle down the Coronas we had. Kate made zucchini chips with panco which were off the chain! So, it was a tomato, zucchini chip, meat patty, and guacamole with the Aji Chombo hot sauce.

Here’s my recipe for the guacamole (if anyone is interested):

  •  4 ripe avocados
  • 3 tomatoes
  • 1 lime, zested
  • 2 limes, juiced
  • 1/2 bunch of cilantro, washed and dried
  • 1 red onion, finely chopped
  • 2 green onions, diced
  • 1 serrano chiles, finely diced
  • 1 clove of garlic
  • Salt


Birthday Party!

So, that time has come again and that time is MAH BIRFDAY! Last Saturday I celebrated my birthday and the day couldn’t have been better. In the morning, I woke up to Ben climbing into bed and cuddling in my arms. I do have to say, that is one of the best feelings in the world…. until the little bugger starts snoring and drooling on your pillow!

My family drove up from DC (Chantilly to be exact) to come up and have the delicious foods and drinks that we had for everyone. I am sorry though, I didn’t really have the time to take photos of all the great eats that we had that day, but I did make skirt steak and chimi crustini, old bay shrimp, and a whole other assortment of deliciousness. Here are some samples of how us Panamanians like to get down.

Kate and everyone that was there made the day feel very special. And, as always, it not a party without a party-dog!
